Antonio Cossu inherits his passion for a rolling pin from his father Nino. Today in the 2500 sq m museum plant 80 quintals of fresh pasta are produced per day which stands out for the quality of the raw materials.
The ravioli are typical products of Sardinian cuisine, thanks to the exquisite ricotta made by Sardinian shepherds. The filling varies according to the traditions and fresh ingredients available.
These precious small square ravioli are enriched with a mix of delicious cheeses, which make them unique and delicate in aroma and taste.
They can be served in white only with a round of olive oil or a sprinkling of grated pecorino cheese, but they are also excellent with a light sauce of fresh tomato and basil.
