The history of the company begins in 1971, the biological management of the dairy is entrusted to the two brothers Salvatore and Gianfranco Bussu. The Dairy is on the Campeda plateau, in the municipality of Macomer, in the province of Nuoro. 1800 sheep graze on 200 hectares of land; their feeding is enriched only with the addition of organic fodder produced on the farm, without chemical fertilizers. Animals are never treated with antibiotics or synthetic products. The rennet used for coagulation is obtained only from Sardinian breed lambs. Fiore Sardo was born as a DOP and includes a consortium of about 50 breeders.
Strong, spicy, with sheep and vegetable sensations of dried fruit and medicinal plants and with notes of smoking, it is excellent on its own, with Carasau or Guttiau bread, but also to enrich appetizers and side dishes. From a unique aroma to complex dishes such as timbales, savory pies, rich first courses such as risotto and pasta.
