There is a place in Sardinia where the Moro artisan biscuit factory has been working for three generations as a soft and tasty product: in Fonni the king product is the typical Sardinian Savoyard.
For the artisanal production of its biscuit the company uses eggs, flour and sugar, but the main ingredient is the ancient knowledge that has its roots in the confectionery culture handed down by the women of the past who prepared these desserts for special occasions, when the most respected guests arrived in the family or an important event was celebrated.
The artisans whisk the egg whites and yolks separately with the sugar, then combine them creating a soft and delicate mixture. At this point the flour comes into play, added by hand cascade.
From the heart of Barbagia, a genuine product to be eaten alone, to be accompanied by Vernaccia or a good passito, to be used to make delicious and delicate desserts such as tiramisu, to be enjoyed with creams or ice cream.
