Casizolu is a spun paste cheese with a characteristic pear shape, typical of Montiferru. It is obtained with Sardinian-Modica cow's milk, heated to a temperature of 32 ° C and added with liquid rennet, also vegetable. Salting takes place by immersion in brine. The forms are hung in pairs and left to mature for one to 15 months.
Its aromatic flavor recalls the aromas of spontaneous, pleasant pasture, of particular intensity in the seasoned product.
